UZU Rice Noodle GlutenFree
This is a gluten-free noodle(pasta) made from rice grown by Akie Abe at Akie Farm in Yamaguchi prefecture without using pesticides or chemical fertilizers.
The ingredients are simply rice and organic potato starch produced in Japan, and contain no additives.
UZU Rice Noodle GlutenFree [Sprouted Brown]
Using herbicide, pesticide and chemical fertilizer-free brown rice from Akie Farm, we germinated it to increase the nutritional value of GABA and to improve the absorption of vitamins and minerals.
And using only these high-quality sprouted(germinated) brown rice and organic starch from Hokkaido, we created UZU's original Sprouted Brown Rice Noodle.
UZU's WAKA MISO

This year, we are again sharing miso that was specially prepared for consumption in the restaurant, upon request. It is not a product intended for general distribution.
It is made from rice from Akie Farm, carefully grown without the use of pesticides or herbicides, and "Nagatsuma" soybeans, a rare native breed from Saitama Prefecture, combined with "Hyakusho-an salt," a brackish salt from Yuya, and presented after only a few months after preparation.
It is a young miso that has not been fire-roasted and is still in the process of fermentation.
The aging period was purposely shortened to bring out the original flavor of the ingredients.
The mildness of this young product is due to the action of the koji mold that lives in the old cellar.
It is a miraculous taste made possible by the traditional manufacturing method and good ingredients.
We do not use any preservatives or antioxidants such as sake spirit, so please store it in the refrigerator and handle it hygienically.
You can enjoy the fresh flavor unique to young miso for a long time.
